Salsa!

One of my favourite things about summer is making fresh salsa and enjoying it all week in a variety of ways, so I decided to devote this week on “Mind Your Peas and Cukes” to fresh salsa and things to do with it. Of course, any of the forthcoming recipes can be made with bottled salsa, but only if it’s winter or you don’t have a food processor. Otherwise there is no excuse for not making fresh salsa right now.
Salsa
Makes about 5 cups
4 cloves garlic, chopped
2 – 4 jalapeños, seeded and chopped
1 cup cucumber, chopped
½ cup onion, chopped
1 tsp. cumin
½ tsp. salt
6 tomatoes, quartered (about 5 cups)
1 bunch cilantro, stems removed (about 1 cup)
- In a blender or food processor, combine the garlic, chiles, cucumber, onion, cumin and salt. Pulse until finely chopped.
- Add tomatoes and cilantro and pulse until tomatoes are finely chopped. Taste and adjust salt as necessary.
- Serve immediately or let sit a few hours in the fridge to let the flavours combine.
Variation: For black bean salsa, add 1 cup black beans and ½ cup corn to the finished salsa.

Yum! Salsa is one of the best things in the world. Eat it with Eggs, with cheese and quinoa, with Mexican faves…what doesn’t it taste good with? Fresh salsa was my favorite thing about travelling to New Mexico and Texas. Yummy!
I made some fresh green salsa last night for my enchiladas. I took about 1lb of tomatillos, 1 jalapeno, 1 tbsp lime juice and some seasoning and threw it in the food processor. I added some cilantro for my dining partner (I can’t stand the stuff). I think it would also be delicious with a little added garlic (my dining partner is allergic). So easy – why don’t more people make it?

I have to stress that it is imporant to follow the directions. I put everything in the blender and got green salsa. It still tasted good but did not look apealing…. oopps.

This recipe looks great – the addition of cumin is something I wouldn’t think to put in salsa but makes such good sense!
Jill, would you say that a blender did a passable job in terms of texture? For some unknown reason I don’t have a food processor but really want to make this!
